POSITION SUMMARY: Scales flour and water by computer. Manually adds yeast and other required ingredients . Sets time, closes mixer machine, and starts mixer machine. When mixing is complete, Employee will unload Dough onto table or belt. At the end of the shift, employee will Lock Out Tag Out power and clean mixer bowl and paddle with scrapper, brush, and wipes. Employee will brush down exterior of mixer machines. Employee weighs tied pretzels after Fritsch machine. If machine malfunctions, operator opens safety cover or door and removes the dough. The operator closes all safety coverts and doors, resets, and starts the machine. Employee then adjusts weights at rolling machine with dial on control panel . ESSENTIAL FUNCTIONS :
- Record Flour and water amount delivered to mixer
- Follow formulas to specification
- Remove dough from mixer
- Transfer dough using specific tables
- Maintain weights to specification
- Follow GMPs and food safety procedures
- Follow Safety Policies
- Maintain clean and organized work area.
